Christmas Ginger Cookies

Ingredients

  • 1 cup butter, softened

  • 3/4 cup Winnie’s Pure Health Honey

  • 1 tablespoon vanilla essence

  • 1 Winnie’s Pure Health Organic Egg

  • 3 cups Winnie’s Pure Health Chapati Afya flour

  • 1 tablespoon baking powder

  • 1/4 Winnie’s Pure Health Sea Salt

  • For Decoration (Optional)
  • 2 cups chocolate chips cookies

  • 1 cup funfetti sprinkles

Directions

  • Preheat the oven to 180 degrees Celsius. Line 2 baking trays with parchment paper
  • Beat butter and honey in a bowl until creamy
  • Add the egg and vanilla, and beat until completely combined
  • Add flour, baking powder, and salt
  • Start mixing with your hands slowly, and knead the dough
  • Dust the work surface with flour then cut the dough in half, then shape into 2 discs
  • Roll out the dough sprinkling with flour under and over the dough so it doesn’t stick
  • Use Christmas shaped cookie cutters to press out shapes and use a knife or spatula to transfer shapes to prepared baking sheets
  • Bake for 10 minutes or until the surface is pale golden and the edges are just beginning to turn light golden
  • Allow cookies to cool completely on trays
  • Decoration Options
  • In a medium cooking pot, bring 1 cup of water to simmer over low heat. Place a glass/metal bowl on top of the pot so it rests above the simmering water, but doesn’t touch it
  • Place chocolate chips in the bowl and allow the steam to heat the bowl and melt the chocolate. Stir occasionally until the chocolate chips are melted. Once melted, remove the bowl from the pot
  • Dip the cookies in the chocolate and sprinkle with funfetti sprinkles and set aside for it to dry
