Terere (Amaranth) Afya Cookies

Ingredients

  • 2 cups Winnie’s Pure Health Terere Afya flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon Winnie’s Pure Health Herbal Sea Salt

  • 1 cup carrots, grated

  • 1/2 cup peanuts, chopped

  • 1/4 cup raisins

  • 1/2 teaspoon ginger

  • 1/2 teaspoon cinnamon

  • 1/8 teaspoon cardamom

  • ¼ cup Winnie’s Pure Health Honey

  • 1/4 cup ghee, melted

Directions

  • Preheat the oven to 180 degrees Celsius
  • Combine flour, baking powder, salt, ginger, cinnamon and cardamom in a large bowl and mix well
  • In a medium bowl, combine honey, and melted ghee
  • Whisk together until smooth and then stir in carrots
  • Mix wet ingredients with dry ingredients using a spatula until combined
  • Gently stir in the peanuts and raisins
  • Using the palm of your hand, make a ball then flatten the cookies into ½ inch thickness
  • Place them in a greased and parchment paper lined baking sheet and bake for 15 minutes
  • Remove from the oven and allow them to cool
