Terere (Amaranth) Afya Cookies
Ingredients
2 cups Winnie’s Pure Health Terere Afya flour
1 teaspoon baking powder
1/2 teaspoon Winnie’s Pure Health Herbal Sea Salt
1 cup carrots, grated
1/2 cup peanuts, chopped
1/4 cup raisins
1/2 teaspoon ginger
1/2 teaspoon cinnamon
1/8 teaspoon cardamom
¼ cup Winnie’s Pure Health Honey
1/4 cup ghee, melted
Directions
- Preheat the oven to 180 degrees Celsius
- Combine flour, baking powder, salt, ginger, cinnamon and cardamom in a large bowl and mix well
- In a medium bowl, combine honey, and melted ghee
- Whisk together until smooth and then stir in carrots
- Mix wet ingredients with dry ingredients using a spatula until combined
- Gently stir in the peanuts and raisins
- Using the palm of your hand, make a ball then flatten the cookies into ½ inch thickness
- Place them in a greased and parchment paper lined baking sheet and bake for 15 minutes
- Remove from the oven and allow them to cool
