Mashed Matoke
Ingredients
8 matoke green bananas
2 teaspoons ghee
2 teaspoons cumin seeds
2 onions chopped
2 cloves garlic
1 green chilli (optional)
1 blended tomato
1 tablespoon tomato paste
2 teaspoons chopped coriander
1/2 teaspoons black pepper
Directions
- In a cooking pan heat the ghee and add in cumin seeds with chopped onions. Sauté the onions until lightly golden. Add garlic, chilli and tomato paste and cook for 2 minutes. Now, add the blended tomato and cook over medium heat for 5 minutes
- Boil the matoke in a separate sufuria until tender. Drain excess water and mash them with a potato masher until smooth
- Add the mashed matoke to the tomato and onion mixture and cook on medium heat for 5 minutes, stirring all the time. Add salt, lemon juice, black pepper, and chopped coriander and mix
- Serve with vegetables and beef stew
