Githeri with Avocado

Ingredients

  • 3 cups githeri cooked

  • vegetable oil

  • 1 red onion, chopped

  • 1 large tomato, chopped

  • 1 bunch coriander

  • 1 cup carrots, chopped

  • Vegetable stock or water

  • 2 teaspoons Winnie’s Pure Health Herbal Mchuzi

  • 1 teaspoon garlic paste

  • 1/4 teaspoon Winnie’s Pure Health Sea Salt/ Herbal Salt

  • 1/4 teaspoon black pepper

Directions

  • Fry the onions until golden brown
  • Add in the tomatoes, green peppers, carrots and let it simmer for two minutes, then add the Afya Mchuzi and garlic let it cook for 30 seconds and add the githeri
  • Mix well, add the coriander and vegetable stock and simmer for 5 minutes
  • Serve with an avocado
