Ginger Coconut Soup
Ingredients
1 tablespoon olive oil
1 leek, sliced
2 cloves garlic, minced
1 thumb-sized piece ginger, minced
6 cups sweet potato, diced
1 liter water
1 teaspoon Winnie’s Pure Health Afya Mchuzi
1 cup coconut milk
1/4 teaspoon Winnie’s Pure Herbal Sea Salt
1/4 teaspoon black pepper
Directions
- In a pot, heat the olive oil and add the leeks. Cook until soft. Add the garlic and ginger and cook until fragrant
- Add the sweet potato and stir. Add just enough water to cover the potatoes. Bring to the boil and turn it down to a simmer
- Add the Afya Mchuzi and coconut milk. Cook for 25 minutes until the sweet potatoes are very soft. Remove from the heat and let it cool for 10 minutes
- Add the contents in a blender and blend until smooth and silky. Season with salt and pepper
