Ginger Coconut Soup

Ingredients

  • 1 tablespoon olive oil

  • 1 leek, sliced

  • 2 cloves garlic, minced

  • 1 thumb-sized piece ginger, minced

  • 6 cups sweet potato, diced

  • 1 liter water

  • 1 teaspoon Winnie’s Pure Health Afya Mchuzi

  • 1 cup coconut milk

  • 1/4 teaspoon Winnie’s Pure Herbal Sea Salt

  • 1/4 teaspoon black pepper

Directions

  • In a pot, heat the olive oil and add the leeks. Cook until soft. Add the garlic and ginger and cook until fragrant
  • Add the sweet potato and stir. Add just enough water to cover the potatoes. Bring to the boil and turn it down to a simmer
  • Add the Afya Mchuzi and coconut milk. Cook for 25 minutes until the sweet potatoes are very soft. Remove from the heat and let it cool for 10 minutes
  • Add the contents in a blender and blend until smooth and silky. Season with salt and pepper
