Fruit Cake Muffins


  • 250 grams of butter/ghee

  • 250 grams of Winnie’s Pure Health Honey

  • 300 grams of Winnie’s Pure Health Chapati Afya flour

  • 5 Winnie’s Pure Health Organic eggs

  • 1 tablespoon vanilla essence

  • 1 teaspoon baking powder

  • 50ml milk

  • 1/2 teaspoons cinnamon

  • 3/4 teaspoon nutmeg

  • 1/4 teaspoon cardamom

  • 1/2 cup red cherries, chopped

  • 1/2 cup green cherries, chopped


  • Preheat oven to 180 degrees Celsius and line two muffin tins with muffin liners
  • In a bowl, combine all the dry ingredients and set aside
  • Cream the butter and honey slightly (you can use a hand mixer or whisk) milk. Cream continuously until well combined
  • Add in eggs one at a time and vanilla essence. Mix until well combined. Mix until combined to a soft consistency
  • Add in the dry ingredients until just combined then fold in the chopped dried fruit
  • Scoop the mixture into your muffin liners using an ice cream scoop or a ¼ cup measure
  • Bake for 18-20 minutes or until a toothpick comes out clean
