Colorful Brown Rice Salad
Brighten your meal with this vibrant and nutritious colorful Brown Rice Salad. Made with Winnie’s Pure Health Brown Rice and a rainbow of fresh vegetables, this dish is perfect for a healthy lunch or side.
Ingredients
1/8 cup olive oil
1 teaspoon Winnie’s Pure Health Herbal Sea Salt
1/2 teaspoon black pepper
1 teaspoon Winnie’s Pure Health Honey
4 cups cooked Winnie’s Pure Health Brown Rice, chilled
1 carrot diced
1/2 cup green pepper diced
1/4 cup vinegar
1 white onion, chopped
½ cup red pepper, diced
½ cup yellow pepper, diced
2 green onions, chopped
2 tablespoons cilantro, to garnish
Directions
- In a small mixing bowl, combine the olive oil, salt, black pepper, and honey
- Pour the mixture over the chilled brown rice in a large mixing bowl. Toss gently to coat the rice, then set the bowl aside
- Steam the diced carrots, for 2 minutes, until they just start to turn tender. Plunge them into an ice bath to chill and drain them, then stir the vegetables into the rice
- Add the remaining ingredients and toss to distribute the vegetables throughout the rice
- Serve the salad garnished with chopped cilantro
