Broccoli and Spinach Soup

Ingredients
1 tablespoon vegetable oil
2 garlic cloves sliced
1 teaspoon minced ginger
1 red onion, chopped
½ teaspoon ground coriander
½ teaspoon ground turmeric
1 courgette, roughly sliced
1 medium broccoli, chopped
3 leaves spinach, chopped
1/2 lime zested and juiced
500ml vegetable stock
1/4 teaspoon of Winnie’s Pure Health Herbal Salt/ Sea Salt
Directions
- Fry the onions in a cooking pot until translucent. Add the garlic, ginger, coriander, turmeric, and salt, fry on medium heat for a few minutes and then add 1/8 cup of water so that the vegetables do not burn
- Add the courgette and broccoli making sure you mix well to coat the slices in all the spices and cook for 5 minutes. Add the stock and leave to simmer for 2 minutes
- Add the spinach and lime juice and cook until the vegetables are soft
- Take off the heat and wait to for it to cool before pouring everything into a blender and blend until smooth. This will give you a beautiful green. Serve immediately
