Boiled Eggs with Kachumbari (Mayai Pasua)
A Kenyan street food made with our Organic eggs and is easy-to-make. Boiled Eggs with Kachumbari, locally known as Mayai Pasua. This dish combines the simplicity of boiled eggs with the vibrant freshness of kachumbari, a traditional Kenyan salsa-like salad.
Ingredients
5 Winnie’s Pure Health Organic Eggs
Water for boiling
2 onions, cut in small cubes
3 tomatoes, cut in small cubes
2 green chilies, chopped
½ teaspoon Winnie’s Pure Health Herbal Salt
1 bunch of dhania chopped
Directions
- In a sufuria, add in the eggs and enough water to level the eggs and boil for 10 minutes
- Soak the cubed onions in salty water for 5 minutes and drain the water
- In a bowl mix the tomatoes, onions, dhania, and chilies
- Once the eggs are cooked drain the hot water and run the cooked eggs over cold water to make the shells easy to remove
- Remove the shells from each egg, cut halfway into the eggs and fill each egg with kachumbari and serve
