Boiled Eggs with Kachumbari (Mayai Pasua)

A Kenyan street food made with our Organic eggs and is easy-to-make. Boiled Eggs with Kachumbari, locally known as Mayai Pasua. This dish combines the simplicity of boiled eggs with the vibrant freshness of kachumbari, a traditional Kenyan salsa-like salad.

Ingredients

  • 5 Winnie’s Pure Health Organic Eggs

  • Water for boiling

  • 2 onions, cut in small cubes

  • 3 tomatoes, cut in small cubes

  • 2 green chilies, chopped

  • ½ teaspoon Winnie’s Pure Health Herbal Salt

  • 1 bunch of dhania chopped

Directions

  • In a sufuria, add in the eggs and enough water to level the eggs and boil for 10 minutes
  • Soak the cubed onions in salty water for 5 minutes and drain the water
  • In a bowl mix the tomatoes, onions, dhania, and chilies
  • Once the eggs are cooked drain the hot water and run the cooked eggs over cold water to make the shells easy to remove
  • Remove the shells from each egg, cut halfway into the eggs and fill each egg with kachumbari and serve
