Ingredients

  • 8 Winnie’s Pure Health Eggs, the whites separated from the yolks

  • 180 grams of Winnie’s Pure Health Honey

  • 150 grams of Winnie’s Pure Health Chapati Afya/Atta Mark 1 flour

  • 30 grams unsweetened cocoa

  • 1/8 teaspoon baking powder

  • 30 grams of milk

  • 30 grams of oil

  • 1 teaspoon Vanilla essence

  • 2 punnets strawberries

  • 1 punnet blueberries

  • 500 grams whipping cream

  • Dark chocolate to make the cage/grate it and sprinkle on the cake

  • For Syrup
  • 1/2 cup warm water

  • 3 tablespoons Winnie’s Pure Health Honey

Directions

  • Preheat the oven to 180 degrees Celsius. Grease two 6 inches baking pans with oil on the side and line them with parchment paper
  • Whisk egg whites till soft peaks are formed
  • Add in the honey a little at a time and continue beating till a medium to firm peak is formed. Mix the yolks with vanilla and add to the meringue mixture
  • Sieve the dry ingredients into the egg mixture and fold in with a whisk till just combined. Do not over mix
  • In a small bowl combine the milk and oil. Take part of the cake mixture and mix in
  • Fold in the milk batter into the main sponge mix. Portion the mix into two 7 inch containers and bake at 180 degrees Celsius for 40 minutes
  • Place the pans on a wired tray and let the cakes cool at room temperature. Note that before frosting let the cake cool completely at room temperature
  • To assemble
  • Mix the water and the honey to make a syrup. Chop 1 punnet of strawberries and set aside. Whisk the whipping cream and set aside
  • Place one layer of the cake with the bottom side facing up. If the top of your cake is domed, then slice the top evenly so it will lay flat. Brush the cake lightly and evenly with the honey syrup
  • With a spatula/knife spread some of the whipped cream on top of the cake then add a layer of the chopped strawberries
  • Repeat the same with the second layer. If there is a third layer, brush it with the syrup and apply the remaining whipping cream around the cake. Decorate the cake as you wish
