Yellow Beans Stew

Ingredients

  • 3 cups Winnie’s Pure Health boiled Yellow Beans

  • 1 tablespoon vegetable cooking oil

  • 3 ripe tomatoes, diced/pureed

  • 1 onion, diced

  • ½ teaspoon garlic, minced

  • ½ teaspoon ginger, minced

  • 1 cup carrots, cubed

  • 1 teaspoon Winnie’s Pure Health Herbal Salt

  • 1 tablespoon Winnie’s Pure Health Afya Mchuzi

  • 1/2 teaspoon black pepper

  • 1 teaspoon curry powder

  • 1/2 teaspoon chili flakes (optional)

  • 1 teaspoon Paprika powder

  • 1 bunch chopped coriander leaves

  • 1 cup Coconut milk

  • 1 cup water

Directions

  • Heat oil in a sufuria over medium heat. Add onion, stir and fry until translucent
  • Add garlic and ginger and cook, stirring for 3 minutes. To this add the curry powder, chilli flakes, paprika, black pepper and sauté for 30 seconds
  • Then add the tomatoes and cook for 5 minutes, stiring occasionally. Add in the diced carrots and sauté for 2 minutes
  • Add the yellow beans, coconut milk, and water. Stir and cover the pot to simmer on for 15 minutes. Add Afya Mchuzi and coriander and cook for two minutes more
  • Serve with Winnie’s Pure Health Brown Rice and vegetables
