Yellow Beans Stew
Ingredients
3 cups Winnie’s Pure Health boiled Yellow Beans
1 tablespoon vegetable cooking oil
3 ripe tomatoes, diced/pureed
1 onion, diced
½ teaspoon garlic, minced
½ teaspoon ginger, minced
1 cup carrots, cubed
1 teaspoon Winnie’s Pure Health Herbal Salt
1 tablespoon Winnie’s Pure Health Afya Mchuzi
1/2 teaspoon black pepper
1 teaspoon curry powder
1/2 teaspoon chili flakes (optional)
1 teaspoon Paprika powder
1 bunch chopped coriander leaves
1 cup Coconut milk
1 cup water
Directions
- Heat oil in a sufuria over medium heat. Add onion, stir and fry until translucent
- Add garlic and ginger and cook, stirring for 3 minutes. To this add the curry powder, chilli flakes, paprika, black pepper and sauté for 30 seconds
- Then add the tomatoes and cook for 5 minutes, stiring occasionally. Add in the diced carrots and sauté for 2 minutes
- Add the yellow beans, coconut milk, and water. Stir and cover the pot to simmer on for 15 minutes. Add Afya Mchuzi and coriander and cook for two minutes more
- Serve with Winnie’s Pure Health Brown Rice and vegetables
