Wimbi Afya Pancakes
Ingredients
2 very ripe bananas, mashed
2 Winnie’s Pure Health Organic Eggs, beaten
1 tablespoon Winnie’s Pure Health Honey
1 and 1/4 cup Winnie’s Pure Health Wimbi Afya
1 teaspoon cinnamon
1 teaspoon baking soda
1/4 teaspoon Winnie’s Pure Health Sea Salt/ Herbal Salt
Sliced bananas, strawberries or blueberries for garnish
Cooking oil to fry
Directions
- Add the eggs, 1 tablespoon oil and honey to the mashed bananas and mix well
- Add the dry ingredients to a large bowl. Whisk to combine. Add the liquid ingredients to the dry and mix just until you have a smooth thick pour-able batter
- Heat oil in a pan on medium heat; pour approximately 1/2 cup amounts into pan, leaving room to turn
- Cook until bubbles appear and edges dry. Reduce heat if they start to burn
- Turn to cook the other side
- Serve with honey and banana, strawberry or blueberry toppings
