Uji Afya Cookies
Ingredients
¾ cup softened butter
2 Winnie’s Pure Health Organic Eggs
¼ cup Winnie’s Pure Health Honey
1 cup Winnie’s Pure Health Uji Afya flour
1 cup Winnie’s Pure Health Atta mark 1 whole wheat flour
1 teaspoon baking soda
1 teaspoons ground cinnamon
1/2 teaspoons ground ginger
Directions
- Preheat the oven to 180° Celsius and grease your baking tray
- In a bowl, mix together the flour, baking soda, cinnamon, and ginger; set aside
- In a different bowl, beat together the butter and honey until fluffy. Add the eggs one at a time and mix well
- Add the dry ingredients to the butter mixture and mix the dough with your hands. Add more flour if the mixture is too sticky
- To form each cookie, make a golf-ball-sized ball and then flatten it between your hands. Arrange them on the prepared baking tray and bake for 20 minutes
- When done, remove from the oven and leave to cool before serving
