Njahi (Black Turtle Beans) Stew

Boiled njahi
Olive oil
1 tablespoons Winnie’s Pure Health Herbal Mchuzi
2 tablespoons of whole cumin seeds
1 red onion, cut
2 tomatoes cut in small pieces
150ml coconut milk
Dhania, finely chopped
1 green hoho, cut finely
3 cloves of garlic, minced
1 inch ginger root, minced
1/2 teaspoon Winnie’s Pure Health Herbal Salt/ Sea Salt
Directions
- In a sufuria add a little olive oil and heat it up. Add the red onion, ginger and garlic paste. Then add some salt to taste. Sauté until the onions are soft
- Add tomatoes together with the hoho. Let them simmer on low heat until they soften
- Add the boiled njahi and mix. Then add Herbal Mchuzi mix in with the coconut milk. Let this simmer for about 5-10 minutes. Add 1/2 cup water and let it simmer
- Add in the dhania, simmer for 2 minutes then serve
