Njahi (Black Beans) Corn Salad
Ingredients
3 cups boiled Njahi (black) beans
1 cup of boiled corn/maize
1 green bell pepper, chopped
1 yellow bell pepper, chopped
1 red bell pepper, chopped
1 cup chopped red onion
½ cup finely chopped fresh cilantro/dhania
1 medium chili
2 tablespoons lime juice
¼ cup olive oil
¼ cup vinegar
½ teaspoon black pepper
½ teaspoon ground cumin
½ teaspoon Winnie’s Pure Health Herbal Sea Salt
Directions
- In a large serving bowl, combine all of the ingredients and toss to combine
- Cover and chill to enhance the flavors
- Serve when ready
