Njahi (Black Beans) Corn Salad

Ingredients

  • 3 cups boiled Njahi (black) beans

  • 1 cup of boiled corn/maize

  • 1 green bell pepper, chopped

  • 1 yellow bell pepper, chopped

  • 1 red bell pepper, chopped

  • 1 cup chopped red onion

  • ½ cup finely chopped fresh cilantro/dhania

  • 1 medium chili

  • 2 tablespoons lime juice

  • ¼ cup olive oil

  • ¼ cup vinegar

  • ½ teaspoon black pepper  

  • ½ teaspoon ground cumin

  • ½ teaspoon Winnie’s Pure Health Herbal Sea Salt

Directions

  • In a large serving bowl, combine all of the ingredients and toss to combine
  • Cover and chill to enhance the flavors
  • Serve when ready
