Njahi (Black Beans) Nutri Bowl
Ingredients
1 cup Winnie’s Pure Health boiled Njahi (Black Beans)
1 cup grated carrots
1 cup yellow capsicum, cubed
1 cup red capsicum, cubed
1 cup shredded purple cabbage
1 avocado, cubed
- For the Salad Dressing
1 cup yogurt
1 clove garlic, minced
Juice from 1 lemon
2 tablespoons olive oil
1 teaspoon Winnie’s Pure Health Herbal Sea Salt
1/4 cup black pepper
1 tablespoon chopped coriander
Directions
- Whisk together yogurt, garlic, lemon juice, olive oil, salt, pepper and coriander in a small bowl and set aside
- Arrange the salad ingredients in a bowl or a plate and serve with the dressing when ready to eat
