Njahi (Black Beans) Nutri Bowl

Ingredients

  • 1 cup Winnie’s Pure Health boiled Njahi (Black Beans)

  • 1 cup grated carrots

  • 1 cup yellow capsicum, cubed

  • 1 cup red capsicum, cubed

  • 1 cup shredded purple cabbage

  • 1 avocado, cubed

  • For the Salad Dressing
  • 1 cup yogurt

  • 1 clove garlic, minced

  • Juice from 1 lemon

  • 2 tablespoons olive oil

  • 1 teaspoon Winnie’s Pure Health Herbal Sea Salt

  • 1/4 cup black pepper

  • 1 tablespoon chopped coriander

Directions

  • Whisk together yogurt, garlic, lemon juice, olive oil, salt, pepper and coriander in a small bowl and set aside
  • Arrange the salad ingredients in a bowl or a plate and serve with the dressing when ready to eat
