Nduma (Arrow Roots) with Beef

Ingredients

  • For the arrow roots
  • 250 grams beef, cubed

  • 3 arrow roots, peeled and cut horizontally

  • ¼ teaspoon Winnie’s Pure Health Salt

  • Water to cover the arrow roots

  • For the Beef
  • 1 tablespoon leaves coriander

  • 2 tomatoes, chopped

  • 1 onion, chopped

  • 1 tablespoons oil

  • 1 tablespoon curry powder

  • 1 tablespoon Afya Mchuzi Mix

  • ½ teaspoon garlic, minced

  • ¼ teaspoon Winnie’s Herbal Sea Salt

Directions

  • In a sufuria add arrow roots, salt and enough water to cover them. Boil for 30 minutes and check if ready by piercing the arrow root with a knife. If it is still hard add more water and continue cooking until soft
  • Meanwhile wash the beef and add 2 cups of water. Boil until soft
  • Add oil to the meat and allow it to brown for 3 minutes
  • Add garlic, onions and allow to cook then add tomatoes and cover for 5 minutes. Add salt, Afya Mchuzi and curry powder, ½ cup of water, stir and reduce the heat to simmer for 10 minutes. Finally sprinkle the coriander and serve with boiled nduma and vegetables
