Ndengu (Green Gram) Curry

Ingredients

  • 250 grams, boiled green grams

  • 2 tablespoons oil

  • 2 fresh tomatoes chopped

  • 1 tablespoon tomato paste

  • 1 onion, chopped

  • 1/2 teaspoon garlic paste

  • 2 cubed carrots

  • 2 green chilies

  • 1 teaspoon cumin powder

  • 1 teaspoon coriander powder

  • 1/4 teaspoon turmeric powder

  • 1/2 teaspoon Winnie’s Pure Health Afya Mchuzi

  • 1/4 teaspoon garam masala

  • 1/2 teaspoon Winnie’s Pure Health Herbal Sea Salt

  • 1 cup coconut milk

  • 2 cups water

Directions

  • Blend tomatoes and green chillies until smooth
  • Heat oil in a cooking pot, add the onions and garlic past. Fry until the onions are almost golden, then add the tomato paste and all the spices
  • Fry together then add carrots and cook for two minutes. Add the boiled green grams. Stir fry them in this mixture for a few minutes for the flavor to be properly absorbed by them. Then add the blended tomatoes. Cook for 5 minutes then add Afya Mchuzi, salt, coconut milk and water. Stir and let this simmer for 10 minutes
  • Serve with some whole grain Chapatis
