Ndengu (Green Gram) Curry
Ingredients
250 grams, boiled green grams
2 tablespoons oil
2 fresh tomatoes chopped
1 tablespoon tomato paste
1 onion, chopped
1/2 teaspoon garlic paste
2 cubed carrots
2 green chilies
1 teaspoon cumin powder
1 teaspoon coriander powder
1/4 teaspoon turmeric powder
1/2 teaspoon Winnie’s Pure Health Afya Mchuzi
1/4 teaspoon garam masala
1/2 teaspoon Winnie’s Pure Health Herbal Sea Salt
1 cup coconut milk
2 cups water
Directions
- Blend tomatoes and green chillies until smooth
- Heat oil in a cooking pot, add the onions and garlic past. Fry until the onions are almost golden, then add the tomato paste and all the spices
- Fry together then add carrots and cook for two minutes. Add the boiled green grams. Stir fry them in this mixture for a few minutes for the flavor to be properly absorbed by them. Then add the blended tomatoes. Cook for 5 minutes then add Afya Mchuzi, salt, coconut milk and water. Stir and let this simmer for 10 minutes
- Serve with some whole grain Chapatis
