Lemon Poppy Cake

Ingredients
250 grams of ghee/butter softened
250 grams of Winnie’s Pure Health Honey
300 grams of Winnie’s Pure Health Chapati Afya or Atta mark 1 flour
5 Winnie’s Pure Health Organic Eggs
1 tablespoon vanilla essence
1 teaspoon baking powder
½ teaspoon baking soda
50 ml milk
¼ cup poppy seeds
Zest of 1 lemon
Directions
- Preheat the oven to 180°C. Grease and line two 7-inch round baking pans with parchment paper
- In a bowl, combine the flour, baking powder, and poppy seeds. Set aside
- In a mixing bowl, cream the ghee or butter, Winnie’s Pure Health Honey, and milk using a hand mixer or whisk until smooth and well combined
- Add the eggs one at a time and vanilla essence, mixing well after each addition until the batter is soft and smooth
- Gently fold the dry ingredients into the wet mixture using a spatula or whisk. Do not overmix to keep the cake light and fluffy. Add lemon zest for a fresh citrus flavor
- Pour the batter evenly into the prepared pans. Bake at 180°C for 50–55 minutes, or until a toothpick inserted into the center comes out clean. (Baking time may vary depending on your oven.)
- Remove the cakes from the oven and let them cool in the pans for 10 minutes, then transfer to a wire rack to cool completely before slicing
