Lemon Poppy Cake

Ingredients

  • 250 grams of ghee/butter

  • 250 grams of Winnie’s Pure Health Honey

  • 300 grams of Winnie’s Pure Health Chapati Afya/Atta mark 1 flour

  • 5 Winnie’s Pure Health Organic Eggs

  • 1 tablespoon vanilla essence

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • 50ml milk

  • ¼ cup poppy seeds

  • Lemon zest

Directions

  • Preheat the oven to 180 degrees Celsius
  • Line and grease two 7 inch baking round containers
  • Mix the flour, baking powder, and poppy seeds in a bowl and set aside
  • Cream the ghee and honey slightly (you can use a hand mixer a whisk) and milk. Cream continuously until well mixed
  • Add in eggs one at a time and vanilla essence. Mix until combined to a soft consistency
  • Fold in the dry ingredients with a whisk or spatula. Mix until combined, do not over mix
  • Pour the batter into two 7-inch baking containers
  • Bake in the oven for 55 minutes at 180 degrees Celsius (Cooking time may vary depending on the oven)
  • Remove the cake from the oven to cool after a toothpick inserted in the middle of the cake comes out clean
