Ingredients
2 cups green peas
1 kg potatoes, peeled and cut into chunks
Water – to cover
1 teaspoon Winnie’s Pure Health Herbal Sea Salt
2 cups fresh maize (corn)
1 bunch pumpkin leaves fried for 3 minutes and pureed
1/4 teaspoon black pepper (optional)
1 teaspoon ghee/butter (optional)
Directions
- Place the peas and potatoes in a sufuria and add water to cover. Stir in the salt and place over medium flame. Bring to a boil, then reduce heat and simmer until potatoes are cooked through. Drain, reserving the liquid
- Simmer the corn with a little salted water in a separate saucepan for a few minutes while the potatoes and peas are cooking
- Mash the potatoes and peas together with a potato masher. Stir in the corn/maize with a little of the reserved liquid if the mixture is dry, add pureed pumpkin leaves and season to taste with salt and pepper
- Serve hot with beef and kachumbari
