Fruit Cake Muffins
Ingredients
250 grams of butter/ghee
250 grams of Winnie’s Pure Health Honey
300 grams of Winnie’s Pure Health Chapati Afya flour
5 Winnie’s Pure Health Organic eggs
1 tablespoon vanilla essence
1 teaspoon baking powder
50ml milk
1/2 teaspoons cinnamon
3/4 teaspoon nutmeg
1/4 teaspoon cardamom
1/2 cup red cherries, chopped
1/2 cup green cherries, chopped
Directions
- Preheat oven to 180 degrees Celsius and line two muffin tins with muffin liners
- In a bowl, combine all the dry ingredients and set aside
- Cream the butter and honey slightly (you can use a hand mixer or whisk) milk. Cream continuously until well combined
- Add in eggs one at a time and vanilla essence. Mix until well combined. Mix until combined to a soft consistency
- Add in the dry ingredients until just combined then fold in the chopped dried fruit
- Scoop the mixture into your muffin liners using an ice cream scoop or a ¼ cup measure
- Bake for 18-20 minutes or until a toothpick comes out clean
