Egg Salad

Ingredients

  • 1/8 teaspoon Winnie’s Pure Health Sea Salt

  • 1/8 teaspoon black pepper

  • 1/8 teaspoon lemon juice

  • 2 tablespoons olive oil

  • 4 hard-boiled Winnie’s Pure Health Organic eggs, quartered

  • 1 tablespoon minced green onion

  • ½ cup diced cherry tomato

  • ¼ cup diced avocado

  • 1/2 cup diced cucumbers

  • 1 tablespoon dhania

Directions

  • Mix the vinaigrette ingredients in a small bowl – sea salt, black pepper, lemon juice, and olive oil
  • In a separate bowl mix the green onions, tomatoes, cucumbers, dhania and avocado
  • Add in the eggs and drizzle the vinaigrette and mix gently
  • Serve over our wholegrain chapati or eat as it is
