Egg Curry with Brown rice

Ingredients

  • 1 onion, chopped

  • 2 tomatoes, blended

  • 2 tablespoon oil

  • ¼ teaspoon Winnie’s Pure Health Herbal Salt

  • 1 1/2 tablespoon tomato paste

  • 1 teaspoon Winnie’s Pure Health Afya Mchuzi

  • 1 green chili

  • ½ teaspoon turmeric powder

  • 1 teaspoon Curry powder

  • 1 tablespoon chopped coriander

  • 4 boiled Winnie’s Pure Health organic eggs (boiled for 8 minutes, shell removed and halved)

Directions

  • Heat the oil in a pan and sauté the onions for two minutes
  • Add turmeric powder, curry powder, Afya Mchuzi and stir. Add the blended tomatoes and cook for a minute
  • Throw in the tomato paste, salt and chili and let it cook for a few minutes before adding the halved eggs and some water and let it simmer for 2 minutes
  • When ready, sprinkle the finely chopped coriander for flavor and to garnish
  • Serve with Winnie’s Pure Health Brown Rice
