Egg Curry with Brown rice
Ingredients
1 onion, chopped
2 tomatoes, blended
2 tablespoon oil
¼ teaspoon Winnie’s Pure Health Herbal Salt
1 1/2 tablespoon tomato paste
1 teaspoon Winnie’s Pure Health Afya Mchuzi
1 green chili
½ teaspoon turmeric powder
1 teaspoon Curry powder
1 tablespoon chopped coriander
4 boiled Winnie’s Pure Health organic eggs (boiled for 8 minutes, shell removed and halved)
Directions
- Heat the oil in a pan and sauté the onions for two minutes
- Add turmeric powder, curry powder, Afya Mchuzi and stir. Add the blended tomatoes and cook for a minute
- Throw in the tomato paste, salt and chili and let it cook for a few minutes before adding the halved eggs and some water and let it simmer for 2 minutes
- When ready, sprinkle the finely chopped coriander for flavor and to garnish
- Serve with Winnie’s Pure Health Brown Rice
