Cornbread with Strawberries
Ingredients
1 and 1/4 cups Winnie’s Pure Health Chapati Afya flour
¼ cup Winnie’s Pure Health Ugali Afya flour
1 teaspoon Winnie’s Pure Health Herbal Sea Salt
½ teaspoon baking soda
1 teaspoon baking powder
1 and 1/3 cups whole milk
¼ cup Winnie’s Pure Health Honey
2 Winnie’s Pure Health Organic Eggs
1 cup Strawberries, cut into halves
8 tablespoons ghee/ butter, melted
Directions
- Place a cast-iron pan inside a preheated 190 degrees Celsius oven to heat while you make the batter
- In a bowl, whisk together the Ugali Afya flour, Chapati Afya flour, salt, baking powder, and baking soda
- Whisk in the milk, eggs, and honey until just combined
- Whisk in the melted butter, reserving about 1 tablespoon for coating the skillet
- Reserve about 10 strawberries. Fold the remaining strawberries into the batter, and then add the remaining to the surface of the mixture
- Carefully remove the hot skillet from the oven. Reduce oven temperature to 180 degrees Celsius
- Coat the bottom and sides of the hot skillet with 1 tablespoon of butter/ghee
- Pour the batter into the cast iron and place it in the Centre of the oven on top of the sheet pan
- Bake for 30 minutes or until a toothpick inserted into the Centre comes out clean. Allow to cool and serve
