Coconut Cake
Ingredients
1 Orange
1/4 cup coconut oil
1/4 cup coconut milk
2 tablespoons Winnie’s Pure Health Honey
6 Winnie’s Pure Health organic Eggs
1 teaspoon vanilla extract
1/2 cup coconut flour
1/2 teaspoon baking soda
1/2 teaspoon Winnie’s Pure health Pure Sea Salt
Directions
- Preheat the oven to 180 degrees Celsius
- Grease a loaf pan and set aside
- Remove the orange zest and add it to a blender. To the blender add coconut oil, coconut milk, honey, eggs, and vanilla extract. Blend for 20 seconds
- In a bowl, mix the coconut flour, baking soda and salt
- Add the wet ingredients into the dry and mix with a spatula
- Pour batter into the loaf pan and bake for 30 minutes or until a toothpick inserted into the center comes out clean
- Squeeze the juice out of the orange and set aside
- While the cake is still warm, poke it with a toothpick throughout and pour the juice over and let the cake absorb the juice before removing it from the pan
