Broccoli and Spinach Soup


  • 1 tablespoon vegetable oil

  • 2 garlic cloves sliced

  • 1 teaspoon minced ginger

  • 1 red onion, chopped

  • ½ teaspoon ground coriander

  • ½ teaspoon ground turmeric

  • 1 courgette, roughly sliced

  • 1 medium broccoli, chopped

  • 3 leaves spinach, chopped

  • 1/2 lime zested and juiced

  • 500ml vegetable stock

  • 1/4 teaspoon of Winnie’s Pure Health Herbal Salt/ Sea Salt


  • Fry the onions in a cooking pot until translucent. Add the garlic, ginger, coriander, turmeric, and salt, fry on medium heat for a few minutes and then add 1/8 cup of water so that the vegetables do not burn
  • Add the courgette and broccoli making sure you mix well to coat the slices in all the spices and cook for 5 minutes. Add the stock and leave to simmer for 2 minutes
  • Add the spinach and lime juice and cook until the vegetables are soft
  • Take off the heat and wait to for it to cool before pouring everything into a blender and blend until smooth. This will give you a beautiful green. Serve immediately
