Blueberry Muffins

Ingredients

  • 250 grams of ghee

  • 250 grams of Winnie’s Pure Health Honey

  • 300 grams of Winnie’s Pure Health Chapati Afya/Atta mark 1 flour

  • 5 Organic Winnie’s Pure Health Eggs

  • 1 tablespoon vanilla essence

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • 50ml milk

  • 1 cup blueberry fruits cut in quarters

Directions

  • Preheat the oven to 180 degrees Celsius
  • Grease a muffin tin and fill it with paper liners
  • Mix the flour and the baking powder in a bowl and set aside
  • Cream the ghee and honey slightly (you can use a hand mixer or a whisk) and add milk. Cream continuously until well mixed
  • Add in eggs one at a time and vanilla essence. Mix until combined to a soft consistency
  • Fold in the dry ingredients with a whisk or spatula. Mix until combined, do not over mix
  • Finally, fold in the blueberry fruits. Scoop the batter with an ice cream scoop into the muffin pan half way
  • Bake for 15 – 20 minutes until a toothpick inserted comes out clean
