Healthy Whole Grain Blueberry Muffins

Ingredients
250 grams of ghee
250 grams of Winnie’s Pure Health Honey
300 grams of Winnie’s Pure Health Atta mark 1 flour
5 Organic Winnie’s Pure Health Eggs
1 tablespoon vanilla essence
1 teaspoon baking powder
½ teaspoon baking soda
50ml milk
1 cup blueberry fruits cut in quarters
Directions
- Preheat the oven to 180 degrees Celsius
- Grease a muffin tin and fill it with paper liners
- Mix the flour and the baking powder in a bowl and set aside
- Cream the ghee and honey slightly (you can use a hand mixer or a whisk) and add milk. Cream continuously until well mixed
- Add in eggs one at a time and vanilla essence. Mix until combined to a soft consistency
- Fold in the dry ingredients with a whisk or spatula. Mix until combined, do not over mix
- Finally, fold in the blueberry fruits. Scoop the batter with an ice cream scoop into the muffin pan half way
- Bake for 15 – 20 minutes until a toothpick inserted comes out clean
