Overnight Coffee Cake

Ingredients

  • 1⁄2 cup butter, softened

  • 3⁄4 cup Winnie’s Pure Health Honey

  • 4 Winnie’s Pure Health Organic eggs, at room temperature

  • 1 teaspoon vanilla

  • 1 cup buttermilk

  • 11/2 cup Winnie’s Pure Health Chapati Afya flour

  • 1/2 cup Winnie’s Pure Health Terere Afya flour

  • 2 tablespoons ground flax seeds

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 1⁄4 teaspoons cinnamon

  • 1⁄2 teaspoon Winnie’s Pure Health herbal salt

  • Topping
  • 1⁄2 cup Winnie’s Pure Health Honey

  • 1⁄2 teaspoon cinnamon

  • 1⁄4 teaspoon nutmeg

  • 1⁄2 cup groundnuts, chopped (or walnuts)

Directions

  • Cream butter and honey
  • Add eggs and vanilla and beat well
  • Combine dry ingredients in a separate bowl
  • Add dry ingredients to the wet ingredients alternating with buttermilk
  • Pour into greased 9 x 13 pan
  • Combine topping ingredients and sprinkle over batter
  • Cover with foil and refrigerate overnight
  • In the morning, remove the foil and place into a cold oven. Turn to 180 degrees Celsius and bake for 40 minutes until done
