Mashed Matoke


  • 8 matoke green bananas

  • 2 teaspoons ghee

  • 2 teaspoons cumin seeds

  • 2 onions chopped

  • 2 cloves garlic

  • 1 green chilli (optional)

  • 1 blended tomato

  • 1 tablespoon tomato paste

  • 2 teaspoons chopped coriander

  • 1/2 teaspoons black pepper


  • In a cooking pan heat the ghee and add in cumin seeds with chopped onions. Sauté the onions until lightly golden. Add garlic, chilli and tomato paste and cook for 2 minutes. Now, add the blended tomato and cook over medium heat for 5 minutes
  • Boil the matoke in a separate sufuria until tender. Drain excess water and mash them with a potato masher until smooth
  • Add the mashed matoke to the tomato and onion mixture and cook on medium heat for 5 minutes, stirring all the time. Add salt, lemon juice, black pepper, and chopped coriander and mix
  • Serve with vegetables and beef stew
