Coconut Cake


  • 1 Orange

  • 1/4 cup coconut oil

  • 1/4 cup coconut milk

  • 2 tablespoons Winnie’s Pure Health Honey

  • 6 Winnie’s Pure Health organic Eggs

  • 1 teaspoon vanilla extract

  • 1/2 cup coconut flour

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon Winnie’s Pure health Pure Sea Salt


  • Preheat the oven to 180 degrees Celsius
  • Grease a loaf pan and set aside
  • Remove the orange zest and add it to a blender. To the blender add coconut oil, coconut milk, honey, eggs, and vanilla extract. Blend for 20 seconds
  • In a bowl, mix the coconut flour, baking soda and salt
  • Add the wet ingredients into the dry and mix with a spatula
  • Pour batter into the loaf pan and bake for 30 minutes or until a toothpick inserted into the center comes out clean
  • Squeeze the juice out of the orange and set aside
  • While the cake is still warm, poke it with a toothpick throughout and pour the juice over and let the cake absorb the juice before removing it from the pan
